1. Helper Classes For Easy Cocoa Touch Key-Value Observing (KVO) And Key-Value Binding (KVB)

A set of helper classes that make Cocoa Touch Key-Value Observing much easier.

You can find THObserversAndBinders on Github here.

You can view examples showing exactly how simple the code is here.

Definitely quite a bit of thought was put into creating these classes making for a very clean way to do KVO.

2. Open Source Library For Bringing The iOS 6 Auto Layout API To iOS 5 

A library that brings iOS 6's auto layout API to iOS 5

You can find RRAutoLayout on Github here.

Roland's also written an extensive writeup on the Github page explaining how to use the component, and has included a couple of example projects.
3. Open Source JSON Based Data Model Framework

An ambitious new open source project (Still beta) providing a data model framework using JSON created to make working with libraries utilizing JSON much easier.

You can download the current versions from the homepage here.

You can also find a video demonstrating how to gather data from Twitter and place within a JSONModel object, and display that information on the screen on Vimeo here.

The framework is still in beta (use at your own risk) but it looks like it's off to a great start.
