Are you enabled the User Profile Service for the webapplication?

Follow the steps given below if you haven't enable the User Profile Service:

You can add / modify the email address by using Edit Personal Settings from User Information List.

1. Welcome Menu -> My Settings -> Edit Item

Follow the steps given below if you enabled the User Profile Service:

You have update these details User Profile Admin page under Central Administration,

1. Central Administration -> Click Manage Service Applications link under Application Management

2. Click User Profile Service Application link. This will redirect us to Manage User Profile Service Page.

3. Click Manage User Profiles

4. Search users using Find Profiles Textbox, type patrik on that textbox and click Find button

5. Based on the result, select the User and select Edit My Profile from Context Menu.

6. Now we are in Edit User Profile page, here you can update email for that user.
